Picture this: it’s a rainy, miserable day outside and you’re wanting to take a short rest from the day’s work. It’s early afternoon and even though you’re full from lunch, you need a quick afternoon pick-me-up.
So you decide to do the right thing: you bake a quick batch of these Earl Grey and Poppyseed muffins, before settling down with a hot cup of tea and a magazine to flick through. Sounds good, no?
Earl Grey tea has a slight citrus-y flavor while still maintaining a distinct tea flavor. These muffins are topped with a jam glaze (marmalade is best) meaning you get a strong citrus flavor in each bite. Om nom nom.
With these muffins, be very careful not to overmix or overbake them as they will turn out dry and hard. You can even remove them from the oven when a few crumbs stick to a skewer, as they’ll continue on baking when removed. Moist is how you want these muffins!
