I’m not a fan of cooked carrots. In fact, I can barely recall a time that I’ve had carrots outside of raw form that I’ve actually enjoyed. So the other day when I had a sudden craving for buttery, charred carrots I knew I had to follow through on this whim and see where that craving led me.
There isn’t much to report on this post, I just wanted to share the goodness and maybe inspire you to make your own today. Sauteed in a mixture of butter and coconut oil then heavily seasoned with fresh, backyard herbs (thyme, oregano, rosemary and such) and salt and pepper. The end result was crunchy, herby goodness.
