I’ve discussed to no end my love for “sneaking” veggies into out meals. I mean it’s not technically sneaking, I’m never dishonest with my family. I just find it’s a lot easier to get my kids to eat vegetables when they enjoy them, and they enjoy them by having them deliciously incorporated into their favorite foods.
I mean, that’s just common sense, isn’t it?
When I think of “forcing kids to eat their veggies”, the visual that comes to mind are children idly stabbing at a pile of mushy greens on their plates while pleading with their parents, “Do I have to?!”. This also applies to many adults I know.
So let’s reiterate: eating healthy is as simple as mixing good-for-you foods into what you’re already eating. And making it so darn delicious that no one feels duped in the end.
For example, our veggie packed meatballs that include carrots and celery– I’ve yet to see even the pickiest of eaters turn this down!
I never make a dish without including fresh garlic and onions. There’s usually spinach mixed in as well. I’m also prone to add diced mushrooms to all of our ground beef and pork recipes. Some of my favorite ways to do this include lasagna and tacos.

Mushrooms require minimal growing space and water, and are ready to harvest in just a matter of days, making them one of the most earth-friendly and renewable crops available.
So how do you do it?
- Chop up your favorite mushroom variety to match the consistency of the ground meat.
- Blend the chopped mushrooms with the ground meat.
- Cook your mushroom-meat blend to complete the recipe.
