For the longest time, I avoided making pound cake. Banana cake, carrot cake, caramel cake, chocolate cake and white chocolate mud cake all sound a lot more appealing and appetizing, do they not? Hence the fact that I did not attempt to make pound cakes. Period.
Enter this coconut pound cake. Enter this amazing pound cake. It’s amazing because it’s got the perfect ratio of dense, moist, buttery and sweet. A more perfect recipe exists not, I believe. You’ll also love it because of the subtle coconut flavor its got, making it a perfect cake to bake.
I liked this cake best on days 2-3 as I found it became more moist and flavorsome during that time, though I also loved it when it was fresh on Day 1. It will keep for 3-4 days when stored in an airtight container on the counter.
