I love experimenting with salads. I love to try new combinations and enjoy making new dressings. Salad, as I’ve learnt, is not just a mixture of greens, tomatoes and cucumbers that’s been dressed with lemon and olive oil. No – quite the contrary, that’s just the beginning of salads! Salads can have pretty much anything in them – pasta, chicken, beef, noodles, fruit, even nuts. You’re limited only by your imagination.
This salad is no exception: it’s full of veggies, it’s got chicken for your protein, and it’s even got peanuts in it. But that’s not all – its dressing has got peanut butter in it amongst other things. Perfection.
It’s simple to make: simply chop all your veggies up, shred your chicken and combine everything in a jug to make your dressing. Easy!
