When I told my daughter that I was making chocolate pudding she was excited for days. Things like chocolate pudding are a big deal in our house because it’s a treat that I rarely make.
You remember those little dirt cups you used to eat when you were a younger? The ones with chocolate pudding (made from a box) and some kind of whipped cream product and then crumbled up cookies? Oh, they were delicious.
We mixed together milk, pumpkin puree, chia seeds and peanut butter.. so seriously, you don’t have to feel guilty about eating it! There are so many nutrients packed into this that you may find yourself doubling the recipe so you can eat twice as much.. that’s how it works, right?
I layered this with homemade whipped cream and topped with crumbled cookies. (You can just use your favorite cookie recipe, I bought mine from the grocery store). My kids freaked out. I planned on trying “just a bite” and ended up greedily scarfing down the entire thing. I have no regrets.
