TGIF! Amanda again from A Cookie Named Desire. Here is something about me that I wanted to share with you: I am a snack fiend. Really, I am. I probably eat way too many snacks in a day, so I do my best to make them as healthy as possible by making them myself. My favorite thing to make is a nice chewy granola bar because I can easily grab one and go, or stick them in my daughter’s lunch bag.
Lately, I’ve been grooving on these chocolate coconut granola bars because I love that extra chewiness from the coconut, plus it goes so well with the chocolate! Chocolate + Coconut is probably one of my favorite flavor combos. I cut them into nice, thick bars so you can snack on them during the whole morning which is essential to keep me going at my job which requires me to be high energy all the time. (It also works as a way to calm yourself during those really hectic mornings!) I based this off an old granola bar recipe I had, but altered it to make it just a little more healthy (really, I just didn’t want to put corn syrup in my bars).
In the end, we have a deliciously coconuty bar with some chocolate chips and a nice simple chocolate ganache drizzle. I do want to tell you though, that ganache drizzle, it doesn’t set like the store-bought chocolate drizzles cause… it’s a ganache, so if you want, you can skip the drizzle. It is so good with it though. Like, you kinda wanna just dip the granola bars right in the ganache kind of good. It also gives the bars a bit of an “Almond Joy” flavor. Whatever you decide to you, you won’t be disappointed, I promise!
The best part of this chocolate coconut granola bar recipe though? You don’t even have to use chocolate or coconut. You can substitute in anything you want or have around the house! It is totally cutsomizable according to your own tastes and what is available. Just the way food should be, right?
