Ahh, ice cream. Without a doubt, it’s a pantry (fridge) staple that most people cannot live without.
It’s creamy, sweet, refreshing and pairs beautifully with a countless number of other foods. Like fruit crumbles and waffle cones, for example.
Oh – and Oreos. Ice cream and Oreos? Yes puhleeese.
Sadly, I am one of the minority who cannot enjoy ice cream. Before y’all call me a party pooper or fussy eater, I can’t eat ice cream because my body can’t tolerate it. Boo.
It’s probably the high sugar/fructose/glucose content as well as the dairy that my body cannot tolerate. I can eat a spoonful here or there without any issues, but I can’t enjoy more than just a mouthful without feeling unwell.
Please, let’s all have a moment of silence, in remembrance of my poor self who cannot enjoy ice cream.
BUT! There’s hope! There’s hope for me AND for those of you who are vegan/dairy intolerant!
Say hellooo to this banana ice cream. Or should I say nice cream?
Provided that your bananas are frozen, it’ll take all but two minutes for you to have this stuff in a bowl ready to devour. So it’s fresh, contains no nasties and is full of fruit.
The flavours are really completely up to you. Chocolate is my favourite but you can really play around with this recipe. I’ve added in frozen raspberries before, as well as shredded coconut and cocoa powder.
People, this is the stuff dreams are made of.
Also, if you’re a protein-loving muscle-building gym nut, add in a scoop (or two) of your favorite whey protein isolate. Ice cream that’s high in protein? YES PLEASE.
