For some unknown-to-me reason, yeast does not agree with my belly. The aches and yucky feelings associated with eating bread does not make eating sandwiches, wraps or tortillas worth it for me. (Unless I’m naughtily indulging, of course. That’s a different story.)
So, where possible, I omit the yeast – or bread – from my diet altogether. It’s hard, though, not being able to toast a slice of bread, generously butter it and enjoy the crunchy, hot goodness. I do sometimes indulge – and put up with the known inconvenience of a belly telling me, “I told you not to eat that!”
This is where this “bread” comes in. Chock full of veggies, cheese and other delectable, it’s the perfect replacement for bread. The quickbread turns out very moist once cooked, so I just slice it thinly and pop the pieces in the toaster before enjoying it as a quick breakfast. It’s tasty on its own, though I often butter mine and layer slices of cheese on top. This is the kind of quickbread that also makes a meal out of a bowl of soup or salad. Perfection.
