I wouldn’t necessarily say that my kids are picky eaters, but they are unpredictable. The one that I currently have to work around the most is my sweet middle daughter, who is 6. I would say that she eats a lot of things that kids her age don’t typically eat, but I often struggle at dinner time because I never know if what I make is going to be a hit or miss with her.
When my kids can go out into the yard and pick the ingredients that go into their foods (this year we’ve grown cucumbers, tomatoes and herbs) they are so much more willing to try what I serve them! It’s just so much more inviting when you are so involved in your food.

This recipe is a super simple combination of fresh ingredients that I made specifically for my daughter’s palette. It’s a blend of creamy ricotta cheese mixed with parmesan and fresh basil, topped with fresh Mezzetta Marinara Sauce, roasted cherry tomatoes and lots of gooey cheese.
