This weekend consisted of basically the best day ever. My mother-in-law came to town and spent the weekend playing outside with the kids– since my toddler son has never had a babysitter, this break was much needed and very appreciated. To make it even better, my husband cooked for us for the entire day. Oh, and then they all pitched in to do all. of. the. dishes!
For this overworked and slightly frazzled mom, I can’t imagine a better day!
To those of you who aren’t familiar with our marital situation, when I met my husband he was a chef, but that was a lifetime ago– for the past decade he’s worked in the construction industry. And he works so much that he rarely has the time or energy to cook, which is a shame because, well.. just look at this:
The man knows how to cook! And despite the fact that he’s a 6’6″, 250 pound construction worker, he’s not afraid to whip up some deliciously fresh, guilt-free, veggie-packed beautiful dishes like this. In our house we love to eat together, it’s just how we are, and we take every opportunity we can to pamper each other with delicious meals.
When he told me he was making fried pasta salad I was a little skeptical, but the competing textures of the crispy pasta, the tender squash and the salty feta and bacon had me hooked from the first bite. The combination of ingredients may sound a little unusual, but we were basing this dish on the Ragu READY. SET.
