First, can we talk about this weather a bit? For two months I thought that we were just going to skip winter all together. You won’t hear me complaining about it being 60 degrees on Christmas! And then the snow came, and it was like all of the winter that we missed all hit us in one weekend. We got over two feet and the kids missed a bunch of school.
I love all of the holidays and snow days, but at this point it’s time for us to settle back into a regular routine and get back on track.
The biggest way that we need to get back on track is to get our eating habits in order. That means packing school lunches and prepping meals ahead of time so that we’re eating the right foods. It can be a challenge to come back to a healthy routine after the holidays, but where there’s a will there’s a way!

My oldest daughter loves Caeser Salad and of course I’m glad to see her eat salad, but we’re finding it’s a hard dish to pack. To keep the dressing on the side she fills up containers and half of it ends up going to waste or spilling all over her backpack. She’ll forget her fork, or forget the container of leftover lettuce at school.. yikes.
But we were determined to make it work, and I’m pretty happy with the solution that we came up with.
First, here’s a little fun piece of knowledge for ya! Wikipedia told me, “In the 1970s, Cardini’s daughter said that the original recipe [for Caesar Salad] included whole lettuce leaves, which were meant to be lifted by the stem and eaten with the fingers.[Source]
So, we decided to have a little fun and dissect our salad and eat it old school style. Romaine lettuce leaves, piled with Hillshire Farm® Naturals Lunch Meats, a little bit of Caesar dressing and top it with Parmesan cheese. If you want to keep it true to the old school style, try using olive oil, a squeeze of lemon, salt and pepper and a bit of Worcestershire.
Take your Romaine leaves and roll the ingredients up inside of them, then secure with a toothpick. The dressing will stay inside the meat so your leaves won’t get soggy and it’s much easier than carting around multiple containers with utensils and dressing!
