In our house, we eat all of the time. As a whole, we’re not very picky when it comes to food and a lot of our free time is spent experimenting with different things. Which is why I feel a little silly when I say: I’ve never had cottage cheese. Ever. I mean, it’s not that I’m totally against eating it, but the thought has never even crossed my mind that I should consider trying it. Buuuuuuuut. I found a few good reasons. Like how it’s loaded with protein, B-12 and calcium. So adding a big ol’ scoop of cottage cheese to your foods gives you a good way of adding a few extra nutrients, especially if you use it in place of junky foods!
Friendship Dairies™ put out a challenge to use their cottage cheese in a recipe fit for a crowd. They know that cottage cheese can be polarizing– most of us love it or hate it, right? I gladly accepted the challenge. I figure if I could convince myself to eat it then I can convince anyone! Friendship Dairies cottage cheese has integrity, it’s not soupy or watered down. It’s thicker, richer and cheesier so it holds up well in recipes. I knew it’d be the perfect substitute in this Buffalo Chicken Dip! I was recently introduced to Buffalo Chicken Dip and it was love at first sight, because Buffalo Chicken is literally my favorite food ever. The “traditional” southern recipe includes: a bottle of ranch, chicken that comes in a can, and hot sauce. It really needed a Homegrown style makeover! First, we started with fresh chicken that was sprinkled with ranch seasoning (You can DIY or buy the seasoning from the store). And then we used cottage cheese, cream cheese and Tobasco sauce. When you blend it up it comes out so smooth and creamy! Top with some yummy extras and bake and that’s all there is to it! It’s delicious served with celery, and I also fried up some tortillas and topped them with a little extra ranch seasoning. To put this to the test I had my teenage daughter try it out. She knows that I always sneak things into foods so she was a little hesitant — watch the video to see her reaction!
