One day, I was out shopping (seriously, what’s new?). I headed to the supermarket to pick up a couple of items I needed but while walking past the fresh produce section, I spotted the sign ‘clearance’. I don’t usually stop by those clearance signs, especially in the fresh produce section, but my curiosity got the better of me and I walked over to have a look.
Just as well. The supermarket had most likely over-ordered bananas and they had stacks of them bagged up in those large plastic shopping bags. They were beginning to ripen but were still excellent for consumption.
So… $3.98 and about 6kgs of bananas later, I marched out the supermarket wondering what I was to do with such an abundance of fruit. I peeled and froze the majority of them (bananas freeze really well and keep for a long time!) and made this banana raspberry bread with the rest.
This bread, people. So good. Sweet, tart, moist, flavorsome…. everything. It’s called ‘best ever banana raspberry bread’ within good reason.
It’s very easy to throw together and even tastes good when toasted the next day.
