Summer is almost at an end and that means the fresh supply of delicious, aromatic basil is on its way out also. Here are a few of my favorite summer time basil recipes to enjoy before the fall sets in.
Christmas in July Salad
We call this Christmas in July salad because of the colors, red, white and green. This is always a big hit at the summer barbecues and is so simple to make. Cut a block of mozzarella cheese into small squares, chop some tomatoes fresh from the vine and sprinkle with chopped basil. Toss and serve.
Another simple salad for barbecues or for your dinner table is my Italian Pasta. Prepare the Christmas in July salad as above. Boil a box of penne pasta, rinse and place in a bowl. Add the mozzarella cheese chunks, tomato pieces, basil, 2 cloves of minced garlic, 1 teaspoon of real salt, 1/4 cup balsamic vinegar and 1/4 cup olive oil. Stir together very well and serve with some garlic bread. Another compliment to this meal is a dip for your garlic bread using 1 part olive oil and 1 part balsamic vinegar.
Pesto Mozz Sandwich
After the last two recipes you probably realize I really like to blend tomatoes, mozzarella and basil together. They are just made for each other, like peanut butter and chocolate. So here is yet another favorite using the three amigos. Spread a roll or hoagie bun with pesto, recipe here. Fill the hoagie with chopped tomatoes, cut up mozzarella cheese pieces and chopped basil. Serve with zucchini chips for a healthy alternative to potato chips.
Mini Garden Pizzas
We like to make mini personal pizzas using the Ready, Set, Go Grill, but you could easily make a large pizza and cook on a pizza stone in the oven. Using my bread dough recipe I roll out each mini pizza, spread with olive oil and fresh minced garlic, or garlic salt. Sprinkle with a thin layer of mozzarella cheese. Then the toppings, I gather whatever I can find in my garden, chop it up and throw it on. Sprinkle with another layer of mozzarella and top with fresh basil leaves. My mini pizzas take about 3 minutes to cook in the Ready, Set, Go Grill or for about 10 minutes in the oven.
