Hello Homegrown & Healthy readers! My name is Kelly and I blog over at Semi Homemade Mom. I’ve always loved creating and sharing recipes that use shortcuts in the kitchen, and more recently I’ve had a passion to find healthier alternatives to those shortcuts. I live in central Pennsylvania with my husband, and my two boys, Silas (4 years old) and Wesley (18 months). I’m so glad to be here today!
I don’t know about you, but we are HUGE dip lovers in our family. So much so that every once in a while we have a “dip dinner” night! But of course, lots of dips I’ve come across (and have loved, admittedly) are mostly mayo or sour cream, or both. Not exactly what you want your kids eating all the time.
- 1 medium avocado
- 15oz can cannellini beans
- ½ cup fresh parsley
- 1 lemon
- 1-2 cloves garlic
- Peel, seed, and chop avocado and place in the bowl of a food processor. Drain and rinse beans and add to the bowl. Drop in chopped fresh parsley and garlic. Juice the lemon and add the juice to the food processor. Pulse until all ingredients are well combined and hummus is thick and creamy. Serve with triscuits or fresh veggies.
This white bean hummus was such a tasty dip, it called for a dip dinner night! Avocado, cannellini beans, garlic, fresh veggies – and the kids gobbled it up. With mere minutes to prepare, what a great, healthier choice for your next party too.
