You know the storyline of every high school-romance-90s movie: plain girl goes to school and no one notices her, then she takes off her glasses and lets her hair down and the star football player falls in love with her. You’ve seen it, right? Well, veggie burgers are kind of like that girl.
When I BBQ with my husband and his friends they’re all about the meat, but I prefer lighter fare. It’s not like they love or hate them, they just kind of ignore them. Kind of like that plain girl in the movies. These veggie burgers are unlike any I’ve ever had before. Just like the nerdy girl in the movie, there’s much more to them than you’d suspect. They’re thick, hearty blends of chunky vegetables, oats and black beans (and I think there’s even some fruit in there, too!). To complement the light flavor we paired these burgers with thick slices of avocado, melted queso fresco on it and made a homemade white BBQ for it. To complement that southwestern flavor we loaded the sauce up with fresh cilantro and garlic, mmmm. Although the burger is the star of the show, this sauce is to-do-for and it’s requested quite often.
When these burgers came out everyone stopped in their tracks, mouths hung open. You know, like the scene from the movie where the girl lets her hair down– all eyes were on these burgers!
