For those of you who are regular readers of my blog, you most likely would’ve noticed that most – if not all – my recipes are quick, simple and contain ingredients commonly found in one’s pantry. I’m all about quick, easy, no-fuss recipes that taste great.
As much as I’d like to, it’s just not possible for me to spend hours in the kitchen these days. I dream of spending endless days pottering around in my kitchen baking and cooking food, taste-testing and sharing these edible delights with others just like I used to do in the old days. However, as most of you know, life is very busy at the best of times and does not allow for such luxuries.
This apricot coconut slice is perfect for the busy, time-deprived people like myself. It’s ease and simplicity does not compromise on taste. It will keep for a good 4-5 days when stored in an airtight container in the fridge. In fact, I like this slice best on days 2-3 after the flavors have been left to soak in further.
You could even turn it into an easy weeknight dessert if you so desired: simply cut your squares larger and serve warm with a scoop of icecream or a generous side of custard.
