3 Ways to Eat More Veggies

We all know we should eat more fruits and vegetables. But how? How to make it fast? tasty? easy?

1. Make a smoothie

These make a great, fast breakfast OR dinner! For breakfast, load fruit and greens into a blender. Add some water. Blend and pour into jars to drink while driving or doing what you need to do. Oh My! Did Sharon just advise me to drink and drive? Yep! Green smoothies are approved… (see recipe in this newsletter ;-)

 2. Make zuchetti (or your favorite veg-ghetti)

This machine is AMAZING and easy to use. Take any semi-hard vegetable and make it into pasta. No cooking required. Three blades give you options for different thicknesses and textures. Use beets, turnips, cabbage, onions, sweet potatoes, carrots….let your imagination take over!

Many of you have seen me demonstrate this at festivals. Children ask for SECONDS and THIRDS because it tastes FUN! Get yours today!

Not interested in shopping? That’s totally cool. What else can you do to make your food fun? We sometimes use cookie cutters to make different shapes. One New Year’s we made a whole display of fruit cut as moons, stars and hearts. Other times we use them to make “imprints” in melons.

3. Make a vegetable or fruit-based sauce.

They’ll love it! Serve it over your favorite base. Bases may include cauliflower rice (explained in my Winter Warming Recipes book along with 11 sauce recipes); sprouted quinoa or even shredded lettuce. The sauce recipes only require a blender – fast to make, easy to clean (just put water and soap in the blender, turn on, turn off and rinse!)

      Thanks for enjoying the article and being a role model for health, yourself! Try throwing a handful of spinach in that smoothie — greens really steady the sugar in the bloodstream and you won’t notice a difference in taste….. ;-)
